Save money on corn syrup by using one of these thrift friendly substitute if necessary.  Use brown sugar mixed with water.  For every cup of corn syrup, use 1 1/4 cup of brown sugar mixed with 1/3 cup of water.  Or you can use a little less than 1 cup of honey for 1 cup of brown sugar.

Here is a recipe that makes good use of corn syrup.

 

Divinity Candy Recipe

Ingredients

2 1/2 cups sugar
1/2 cup corn syrup
1/2 cup cold water
2 egg whites
1 cup chopped nuts
1 tsp vanilla
 

Cook the sugar, corn syrup and water until they reach 250 degrees.  Stir constantly until the sugar dissolves.

In a large bowl, beat the egg whites until stiff peaks form.  Then beat in the hot syrup mixture. Continue beating for another 3 minutes, or until the mixture loses its gloss.  Add the vanilla and continue beating on low speed.

Candy is done when it holds its shape when removed from the pan.  Stir in nuts quickly with a strong wooden spoon, and then  drop candy by teaspoonfuls onto a sheet of wax paper.
