Save money if you run out of light cream by using this thrift friendly substitution.  Use evaporated milk.

Here are some frugal recipes that make good use of light cream.

 

Easy Ham Quiche

Ingredients

 

4 eggs
1 can cream of cheese soup
1/2 cup light cream
1/2 cup chopped ham
1/2 cup leftover cooked green vegetables
1 cup sharp cheddar cheese, shredded
1 unbaked pie crust
 
Directions
 
Beat eggs until light.  Gradually beat in  soup and cream.  Add ham, and vegetables. Set aside.
 
Sprinkle cheese, meat and vegetables over the bottom of the pie crust.  Top with soup mixture.
 
Bake at 350 degrees for 50 minutes or until center is firm.  Let stand 10 minutes before serving.
 
 
 

Chalupa Casserole

Ingredients

1 lb ground beef
1/2 cup onion, chopped
1 Tbsps melted butter
2 Tbsps flour
3 Tbsps chili powder
1 cup water
1 1/2 cups tomato soup
1 1/2 cups light cream
1/2 tsp cumin
salt and pepper to taste
12 tortillas, cut in strips
1 1/2 cups cheddar cheese, grated
 

Sauté the ground beef and onion in the butter until cooked.  Add the flour and the chili powder.  Mix well, and cook over medium heat for 5 minutes. Add 1 cup water, and simmer until thick.  Add tomato soup, cream, and spices.  Mix well.

Layer the beef and soup mixture, the  tortillas, and the cheese in a casserole dish.

Bake at 325 degrees until casserole is brown and cheese is bubbly.
