 Tips

Fresh Corn on the Cob -  You can tell if corn is going to be sweet or is old by opening the husk a little, and breaking open on the the kernels.  If the liquid looks like milk, it is fresh.  If it looks like water, it is old.

Corn is at it's best if eaten a few hours after being harvested.  The sugar in corn on the cob turns to starch very quickly.  That is why some corn is deliciously sweet, while other pieces are bland.


Frozen Corn on the Cob - Frozen corn on the cob is a good alternative to fresh corn, because it is often frozen shortly after it is harvested, thereby retaining it's sugar.


Preparation and Cooking - Shuck corn on the cob back peel the husk back from the top.  Remove all the silk fibers.  To cook corn on the cob, use a large pan with lots of water.  Never boil longer than 7 minutes and do not add salt to the water.   You can put the ears in before or after the water comes to a boil.  Reduce cooking time if placed in cold water first.
