If you run out of mayonnaise, save money with one of these
thrift friendly alternatives. For 1 cup of mayonnaise use 1 cup of sour
cream or 1 cup of cottage cheese, whipped until smooth.
Here are a couple recipes that make good
use of mayonnaise.
Homemade Chocolate Mayonnaise
tsp baking soda
mixer bowl, combine flour, sugar, cocoa and baking soda. Add mayonnaise,
vanilla, and 1 1/2 cups water. Beat,
at medium speed, about one minute until smooth.
Pour into greased 9x13-inch baking pan. Bake at 350 degrees
for approx. 25-30 minutes or until toothpick inserted in the center comes out
4 cups elbow macaroni
1 Tbsp vinegar
2 cups chopped and cooked ham
1 green pepper, chopped
1 stalk celery, chopped
2 carrots, diced
3 green onions, sliced, tops and bottoms
3/4 cup corn
1 cup longhorn cheese, cubed
salt and pepper to taste
mayonnaise or Miracle Whip
Cook the macaroni in salted water until tender. Drain,
put in a large bowl and dribble the vinegar over it. Let set for 10
Mix the rest of the ingredients, except the mayonnaise. When
ingredients are mixed, add enough mayonnaise to coat the pasta and give flavor
to the salad. Chill and serve.
