Pancake Syrup

Pancake syrup does not cost a lot of money, but for the thrift conscious, it is more frugal to make it from scratch.  Buy a bottle of pancake syrup, and then when it is empty, fill it with homemade syrup.


To make pancake syrup you need maple flavoring and brown sugar.  You use water and brown sugar in equal amounts.  For each 1/2 cup of sugar and water, use 1 tsp of maple flavoring. Bring the brown sugar and water to a boil, and then simmer the liquid for 15 minutes. Remove from heat, and add the maple flavoring.


You can also use apple pie filling to top pancakes, or sprinkle them with powdered sugar.

Here are a couple frugal recipes to use your syrup.


Blueberry Pancakes


1 1/2 cups flour
1 1/2 tsps baking powder
3/4 tsp baking soda
3/4 tsps salt
1 1/2 cup milk
1 1/2 Tbsp vegetable oil
1 1/2 Tbsp sugar
1 egg
1 1/2 tsps vanilla
1 can blueberries

Add ingredients in the order given. Mix until moistened, and fold blueberries
in at the end. Cook on high heat on a lightly greased griddle.



Potato Pancakes


6 potatoes, grated
1 small onion, grated
salt and pepper to taste
1/4 cup flour
1 egg
1 tsp vegetable oil

Mix the potatoes and onions, and then add sour and pepper to taste. 

Mix in the four and the egg.

Form into patties, and fry in the vegetable oil until brown on both sides.
