Pancakes are a very frugal breakfast. You can add healthy ingredients
to the batter, such as whole grains and blueberries.
If you feel it takes too much time to make pancakes in the morning, make them
during the day. You can freeze them. For a quick breakfast, just
heat them up in the microwave.

1 cup vegetable oil
1 cup sugar
1 tsp salt
2 cups grated yams
2 cups shredded coconut
4 cups flour
1 cup milk
4 tsps baking powder
1 tsp cinnamon
Beat the eggs, oil, sugar and salt together.
Add the rest of the
ingredients, and beat for 5 minutes.
Drop by teaspoonful onto a hot griddle. Cook on both sides until done.
2 cups bisquick mix
1 cup buttermilk
1 cup mashed banana
1/2 tsp cinnamon
3 Tbsp butter
Mix the first 5 ingredients to make the batter.
Fry about 1/4 of a cup of
batter at a time in the butter.
Turn when the top is covered with bubbles
to fry both sides.
