Save money by eating all of your potatoes, including the skins.  If you wait too long to use your potatoes, they may sprout, and you will be unable to use the skin.  Potatoes store best kept in a brown paper bag with a few holes, in a cool, dark place.

To make potato skins, cut the skin off the potatoes, and brush them with a little olive oil.  Season them to taste, line them up on a cookie sheet, and bake them in the oven until they are crisp.  It is a delicious, thrift friendly way to use all of your potatoes.

Here are a couple frugal recipes for your potatoes.


Twice Baked Potatoes


4 large Russet baked potatoes
4 Tbsps butter
1/2 cup milk
1 cup grated cheddar cheese.

Bake the potatoes until just tender, approx 45-60 minutes at 350 degrees.  Cut in half, and scoop out the inside.

Beat the potatoes, butter and milk together in a small bowl.  Put back into the potato shells and top with cheese.

Bake another 30 minutes at 350 degrees.


Super Easy Scalloped Potatoes


1 can cream of mushroom soup
1/3 cup milk
1/4 cup grated cheddar cheese
1/4 cup chopped onions
1/2 tsp salt
1/4 tsp pepper
2 cups potatoes, sliced.

Combine all the ingredients except potatoes.  Mix well.  Add potatoes and put in a casserole dish.

Bake at 375 degrees for 1 hour.
