Buckeye Balls Candy

When my boys were young, I would often have peanut butter balls waiting for them for an after school snack.  Peanut butter balls are made with the first 3 ingredients of this recipe. 

What was I thinking?  Just one more step and you have Buckeye Balls.  I never ate the peanut butter balls.  They were very easy to resist.  Buckeye Balls...not so much!

Ingredients

24 ounces powdered sugar
16 ounces crunchy peanut butter
1 cup butter, softened
12 ounces semisweet chocolate chips
1 Tbsp shortening

Mix the powdered sugar, peanut butter and butter.  If it is too difficult for you to mix these by hand, use a food processor.

Shape into 1-inch balls. 

Melt chocolate chips in the top of a double boiler or in the microwave.  Dip the balls into the chocolate, leaving a small area exposed.

Place on a sheet of wax paper until chocolate hardens.
Store in an airtight container in the refrigerator.
