1 3/4 cup sugar
1 cup vegetable oil
2 cups flour
1 tsp cinnamon
1/2 tsp salt
1 tsp baking soda
1/2 cup walnuts, chopped
In a large mixing bowl, beat the eggs, sugar and oil. In a small bowl,
combine the flour, cinnamon, salt and baking soda. Add to the egg mixture.
Peel and core the apples, and then chop them into little pieces. Add to
the above along with the nuts. Pour cake batter into a 9x13 inch pan, and bake
at 350° for 45 minutes, or until cake passes the toothpick test. When
cool, sprinkle with powdered sugar.
Hints... This is a very frugal recipe for a simple, but tasty cake.
Use a quality vegetable oil, like Canola, for the best results. Simple cakes
like this are often served with whipped or ice cream.
