Sandwiches are a great frugal, and thrift friendly meal.  Too often we only eat them for lunch.  They are also great for dinner, with a bowl of soup.  We are usually rushed for time and serve pretty simple sandwiches for lunch.  You can take them up a notch by serving them with fried onions, or toasted specialty breads.

Or you can mix together the ingredients for sandwich filler recipes.  Save leftover meat for sandwich filling. Put it in the blender to chop it into small pieces, and then add a little mayonnaise.  Save money having sandwiches for dinner.

Here is the recipe for an economical, but delicious,  tuna sandwich.

 

Tuna with Cream Cheese

Ingredients

1 6.5 oz can       tuna
4 oz                   cream cheese, softened
1/4 cup              mayonnaise
1/2 cup              chopped onions
1 tsp                  lemon juice
1/8 tsp               salt
1/8 tsp               pepper

 

Flake the tuna.  Mix all the ingredients, and add to the tuna for the sandwich filler.
