Frugal footnotes:

Here are a couple frugal recipes that make good use of sweetened condensed milk.

Peanut Butter Fudge

1 package peanut butter chips
1 can sweetened condensed milk
1/4 cup butter
1 package semi-sweet chocolate chips

Melt the peanut butter chips in a sauce pan over low heat.  Add 1 cup of the sweetened condensed milk along with 2 Tbsp of the butter.  Stir and then remove the pan from the heat.

Butter or grease the bottom of a 9-inch square pan.  Spread the peanut butter mixture on the bottom of the pan.

Next melt the chocolate chips.  Use the rest of the milk and butter.  Mix, and then spread on top of the peanut butter layer.

Chill.  Cut into squares when firm.

Coconut Pecan Frosting

1/2 cup butter
1 can sweetened condensed milk
3 egg yolks
1 tsp vanilla
1 cup flaked coconut
1 cup pecans, chopped
Put the butter, milk and yolks in a saucepan.  Cook 10 minutes on medium heat, stirring constantly.

Remove from heat and stir in the rest of the ingredients.  Cool mixture before using.
